Tofu Lettuce Wrap Recipe | Vegan Diet | Vegetarian

This vegan (Tofu Lettuce Wrap) recipe is for all the tofu lovers out there. These healthy meatless tofu lettuce wraps are perfect for lunch or appetizers. Ingredients:

Firm Tofu – 16 oz
Chopped onion – 1/2 cup
Chopped green pepper – 1/3 cup
Ginger garlic paste – 1 tbsp (1-inch ginger & 3 garlic cloves)
Chopped shitake mushroom (dry) -1/4 cup
Shredded carrot – 1/4 cup
Olive oil – 2 tbsp x 2
Chopped spring onion – 1/4 cup
Chopped cilantro – 1/4 cup
Roasted peanut & sesame to garnish on top

For the special sauce:
Soy sauce – 3 tbsp
Rice vinegar -1 tbsp
Sesame oil – 1 tsp
Chili sauce – 1 tbsp
Soybean paste – 1 tbsp

Steps:
  1. To prepare a special sauce, in a small bowl, combine all the ingredients listed and stir. Keep it aside.
  2. Chop the tofu into small pieces.
  3. Heat oil in a medium pan over medium flame. Add tofu, stir-fry for 7-8  minutes until light golden brown. Transfer to a bowl and keep it aside.
  4. On the same pan, add oil, ginger garlic paste, chopped onion, green bell pepper, mushroom, shredded carrots. Stir-fry for couple of minutes. 
  5. Add special sauce and fried tofu. 
  6. Garnish with spring onion and cilantro. Transfer to a bowl.
  7. To make a wrap, on a lettuce leaf, add tofu mixture, roasted peanut (crushed), roasted sesame seed, chopped cilantro and spring onion.
  8. Lettuce wrap is ready to serve.
