Moist Easy Healthy Banana Muffins Recipe with Oreo and Pancake Mix

This recipe will teach you how to make banana muffins healthy with pancake mix that you do not need to struggle with too much, making it a lot simple.

If you have ripened bananas, pancake mix, 2 eggs, and Oreo, you should definitely make this dessert/breakfast/snacks. Kids love this muffin when they find a surprise inside (Oreo). 

Ingredients: (8-9 muffins)

2 ripe bananas

2 eggs (room temperature)

1.5 tsp salted butter (melted)

1/4 cup whole milk

1 cup pancake mix

8-9 Oreos

  1. Pre-heat the oven to 350°.
  2. In a bowl, mash the bananas with a fork. Crack 2 eggs and mix them well.
  3. Melt butter in the microwave and add to the mixture.
  4. Add milk and whisk until no lumps.
  5. Add pancake mix gradually. Do not overmix. (Stir only until dry and wet ingredients are incorporated). Keep it aside.
  6. Brush the muffin tray with oil. 
  7. Pour 1 scoop of batter into each muffin tin with a medium ice-cream scooper.
  8. Place Oreo in the center of the muffin mix and press.
  9. Pour 1/3 scoop of batter in each muffin tin on top.
  10. Bake for 15 minutes on the middle rack.
  11. After 15 minutes, let it cool down for 5 minutes.
  12. Use a butter knife to loosen the muffin and gently lift them out of the pan.
  13. Healthy banana muffin with Oreo is ready to be enjoyed.
