Cauliflower Rice Recipe with Omelette | Low Carb Keto Diet

Have you ever made cauliflower rice from scratch? This cauliflower rice recipe will teach you how you can make rice from cauliflower. It is not to be confused with the regular rice that has tons of carbs, simple it is a dish that can be used instead of regular rice. I believe that every meal should have a healthy balance of essential nutrients and this recipe is one of them. Cauliflower rice with veggies is one of the go-to meals that are healthy yet delicious. Ingredients:

3 cups shredded cauliflower

2 tbsp olive oil

1 cup chopped onion

1 cup chopped carrots and green peas

salt to taste

pinch of black pepper

1 tsp ginger garlic paste

1 tsp of cumin powder

1 tsp paprika

1 tbsp soy sauce

1/3 cup chopped green onion

2 eggs

Steps:
  1. In a food chopper shred cauliflower until smooth.
  2. Heat 2 tbsp of olive oil in a medium saucepan over medium heat. Add chopped onion, carrot and peas with a pinch of salt and black pepper.
  3. Stir-fry for couple of minutes. Add 1 tsp of ginger garlic paste. Sauté for couple more minutes before adding cauliflower. Add salt and pepper for cauliflower.
  4. Cook for 5-6 minutes over medium heat. Add cumin and paprika powder and cook for 3-4 minutes more.
  5. Add soy sauce and spring onion. Set it aside.
  6. On a separate pan, heat 1 tsp of olive oil, crack 2 eggs on a bowl and cook on low heat for 1-2 minutes.
  7. Fold the Omelette and place on top of cauliflower fried rice.
