Chicken Bok Choy Stir Fry Recipe with Quinoa

Ingredients:

2 lb boneless chicken
1 lb baby bok choy
1 cup chopped onion
1 cup chopped tomato
1 inch ginger, minced
3 garlic cloves, minced
1 tsp cumin seed
3 red chili
2 tbsp olive oil x 2
salt to taste

For chicken marination:
1 tsp turmeric powder
1 tbsp cumin powder
1 tbsp coriander powder
1 tbsp chili powder
salt to taste
1 tbsp olive oil

For quinoa:
1 cup quinoa
2 cups water

Steps:
  1. Marinate the chicken with the listed ingredients. Keep it aside for 15 minutes.
  2. In the meanwhile, cook quinoa as per instruction in the package.
  3. Heat olive oil on a medium size non-stick pan over medium flame. Add marinated chicken. Stir-fry for 8-10 minutes or until golden brown.
  4. Transfer to a bowl. On the same pan, add olive oil, cumin seeds, red chili, ginger garlic paste. Stir-fry for couple of minutes.
  5. Add chopped onion, tomatoes and salt. Add bok choy and cook for 6-8 minutes until tender.
  6. Add cooked chicken and mix well. Transfer to a serving bowl.
  7. Enjoy with quinoa or rice.
