This is a recipe for a flavor-pack, quick and easy chicken and bacon quesadillas, inspired by traditional Mexican Quesadillas. For your next event or party, this recipe (chicken breast and bacon quesadillas) can be a perfect main course that is very flavorful.
Since this recipe teaches you how to make it on a pan, it is very simple that you can make it in the comfort of your home to make the best and most healthy chicken quesadilla (chicken bacon ranch quesadilla).
Ingredients:
For marinating:
1 tsp cumin powder
1 tsp coriander powder
1 tsp cayenne powder
1/2 tsp oregano
1/2 tsp black pepper
1 tsp garlic
salt to taste
For chicken fry:
2 tbsp olive oil
2 lb boneless chicken breast
For Veggies fry:
2 tbsp olive oil
1 cup chopped onion
1/2 cup chopped red bell pepper
1/2 cup chopped green bell pepper
1/4 cup chopped jalapeno
pinch of salt
1/4 tsp black pepper
For Quesadilla toppings:
1/4 tsp olive oil
2 tortillas Mozzarella cheese
Cooked chicken
Cooked veggies
Cooked bacon
Steps:
- Combine all the spices listed under marinating section of the ingredients. Slice the chicken breast into thin layer and pound.
- Spread the spices mixture on both sides of the chicken breast.
- Heat oil on a skillet over medium heat. Add chicken breast on single layer. Cook for 5 minutes and flip to cook on the other side (covered).
- Cook for 2 more minutes uncovered and transfer to a bowl.
- On the same pan, add oil, all the veggies, salt and pepper. Fry for 2-3 minutes on medium heat. Transfer to a bowl.
- Chop the chicken into long strips. Keep it aside.
- To make quesadilla, use the same pan, add oil, large or medium side tortilla, spread shredded cheese, chopped chicken, cooked veggies, cooked bacon, another layer of cheese and cover with another tortilla.
- Press and cook for 3-4 minutes on each side until the tortilla is crispy.
- Cut into pizza shape and enjoy.
