Ingredients:
1 lb 2 oz King Oyster Mushroom
3 tbsp Cooking Oil
2 Bay Leaves
1 Medium Onion (chopped)
2 medium Tomatoes (chopped)
1/2 inch Ginger + 4 small Garlic (minced)
1/2 tsp Turmeric Powder
1 tsp Cumin Powder
1 tsp Coriander Powder
1 tsp Chili Powder
Salt to taste
1/2 tsp Garam Masala
1/2 cup water
Chopped Cilantro to garnish
Instructions:
- Shred the oyster mushroom using a fork by pushing and dragging the fork downwards.
- Crush ginger and garlic in mortar and pestle to make a paste. Keep it aside.
- On a pan/wok, heat oil over medium heat. Add bay leaves and immediately add chopped onion.
- Stir-fry for 4-5 minutes. Add shredded mushroom.
- Stir-fry for 8-10 minutes until the water from the mushroom dries up.
- Add ginger garlic paste. Fry for 2-3 minutes.
- Add all the spices except garam masala and stir-fry for 2-3 minutes over low heat.
- Add garam masala and stir-fry for 2-3 minutes.
- Add chopped tomatoes and fry for 2-3 minutes.
- Add 1/2 cup water and let it simmer for 4-5 minutes covered.
- Garnish with cilantro and serve with rice or quinoa.
