Kathi Roll Recipe with Shrimp and Egg | Frankie Roll | Street Food Recipe

Kathi roll is a street food that is really famous in south Asian countries like Nepal and India. This recipe teaches you how to make a Kathi roll (aka Frankie Roll) with shrimp wrapped with egg and a roti (tortilla) and for sure spiced mix veggies. Probably you have tried chicken Kathi roll but have you made it with shrimp instead? If not, then you are in for a real treat. Shrimp tastes really good in an egg wrap along with veggies and sweet, spicy, and sour sauce.

Tips: Do not overcook shrimp which can make shrimp chewy and rubbery.

Ingredients:

For Dough:

All-purpose flour- 1 and half cup

Olive oil – 1 tsp

Salt- 1/4 tsp

Water- 3/4 cup

For Shrimp dry rub:

Paprika – 2 tsp

Chili powder- 1/2 tsp

Cumin powder- 1/2 tsp

Garlic powder- 1/2 tsp

Salt- 1/2 tsp

Black pepper- 1/2 tsp

For cooking shrimp and veggies:

Olive oil – 1 tbsp x 2

Chopped onion 1 cup

Chopped green pepper – 1/2 cup

Pinch of salt

1 Green chili (chopped)

For Roti (flat bread):

6 Olive oil- 1 tsp x 6

For Filling:

Egg – 1

Olive oil to cook egg- 1 tsp x 6/roti

Cooked shrimp and veggies

Pinch of chat masala

Tomato ketchup to taste

Hot sauce (siracha) to taste

Lemon to taste

Steps:
  1. To make a dough, pour all-purpose flour and salt in a medium size bowl. Mix it well.
  2. Add olive oil and mix with your clean hand. Add water gradually and make dough. Add some flour if needed.
  3. Transfer the dough to a smooth flat surface. Press and smear the dough with the heel of your hand.
  4. Make a round shape ball and transfer back to the same bowl. Apply some oil on top. Keep it covered for 10-15 minutes.
  5. In the meanwhile, to marinate the shrimp, in a medium size bowl, add shrimp and all the spices (dry rub).
  6. Mix it well and fry on a skillet with olive oil. Cook for 2-3 minutes on both sides. Transfer to a bowl and keep it aside
  7. On the same pan fry all the veggies for couple of minutes. Keep it aside.
  8. Back to the dough, make 5-6 dough balls. Roll to make 1/3 inch tortilla.
  9. Heat oil on an iron cast pan on medium flame. Add tortilla on medium-low flame. Cook for 2-3 minutes on both sides. Keep it aside.
  10. On the same pan, fry 1 eggs with a pinch of salt. Add cooked tortilla. Press and cook for a minute on both sides. 
  11. Transfer to a flat surface to make kathi roll with egg side up. Add shrimp, veggies, pinch of chat masala, tomato ketchup, hot sauce and lemon juice. Roll and wrap in a parchment paper.
  12. Repeat for the rest of the tortilla.
  13. Shrimp kathi rolls are ready to serve.
