This Sevai recipe will teach you how to make a delicious dessert with roasted vermicelli, milk, and other ingredients (revealed in this recipe); during your festivals or any parties where you need a dessert. With mixed nuts, you can take this dessert to the next level.
Ingredients:
Whole milk – 3 cups
Ghee – 2 tbsp
Dry nuts (cashew, almond, pistachio) – 1/2 cup
Condensed milk – 1/4 cup
Cardamom powder – 1/2 tsp
Roasted vermicelli – 1 cup
Saffron – 1/4 tsp
Instructions:
- On medium heat, pour 1 tbsp ghee to fry dry nuts for 2 mins, and set it aside.
- Fry roasted vermicelli on 1 tbsp ghee for a couple of mins and set it aside.
- On high heat, boil milk. Keep stirring and make sure the milk does not stick to the bottom. As the milk boils, add earlier fried roasted vermicelli. Keep stirring.
- Keep boiling until the milk is thick. Secret Step, reduce to 3/4.
- Add cardamom powder, and condensed milk, followed by saffron. Do not forget to keep stirring.
- Add earlier fried dry nuts and reduce the heat to low.
- Keep stirring for a minute more and Sewai is ready.
- Serve and enjoy Sewai (Sevai or Seviyan)! It can be enjoyed either warm or cold.
