Ingredients:
Olive Oil -15 ml
Cooked Quinoa (cold) -1 1/2 cup
2 Eggs
Turkey Sausage – 1/2 cup
Shrimp – 1/3 cup
Onion – 1/2 cup
Red and Orange Pepper – 1/2 cup
Carrot – 1/4 cup
Peas (frozen) – 1/3 cup
Garlic paste – 1 tsp
Salt -1 tsp
Black Pepper – 1 tsp
Soy Sauce – 15 ml
Coriander powder – 1 tsp
Lime/Lemon – 1 tbsp
Soy Sauce – 3 tsp
Siracha Sauce – 3 tsp
Olive Oil – 1 tbsp
Steps:
- Heat oil in a medium pan over medium-high. Add eggs to make scramble eggs and transfer to a bowl.
- On the same pan, fry chopped sausages for 3-4 minutes and transfer to the same bowl.
- Fry shrimp not more than 2 minutes and transfer to the same bowl.
- Use the same pan to heat oil. Add garlic paste, all the veggies, salt and black pepper. Stir-fry for 3-5 minutes or until light brown.
- Add eggs, sausage, shrimp, pre-cooked quinoa, salt and pepper, soy sauce and stir fry for 2 minutes on low heat.
- Garnish with cilantro and serve hot.
