If you have ripened bananas, pancake mix, 2 eggs, and Oreo, you should definitely make this dessert/breakfast/snacks. Kids love this muffin when they find a surprise inside (Oreo).Â
Ingredients: (8-9 muffins)
2 ripe bananas
2 eggs (room temperature)
1.5 tsp salted butter (melted)
1/4 cup whole milk
1 cup pancake mix
8-9 Oreos

Instructions:
- Pre-heat the oven to 350°.
- In a bowl, mash the bananas with a fork. Crack 2 eggs and mix them well.
- Melt butter in the microwave and add to the mixture.
- Add milk and whisk until no lumps.
- Add pancake mix gradually. Do not overmix. (Stir only until dry and wet ingredients are incorporated). Keep it aside.
- Brush the muffin tray with oil.Â
- Pour 1 scoop of batter into each muffin tin with a medium ice-cream scooper.
- Place Oreo in the center of the muffin mix and press.
- Pour 1/3 scoop of batter in each muffin tin on top.
- Bake for 15 minutes on the middle rack.
- After 15 minutes, let it cool down for 5 minutes.
- Use a butter knife to loosen the muffin and gently lift them out of the pan.
- Healthy banana muffin with Oreo is ready to be enjoyed.
