Banda ko achar aka Gobi ko Achar is one of the most common achar in Nepal. Made from raw cabbage, mixed with several Nepali spices make this dish a popular choice during parties as a snack or a side dish. A direct translation of this dish can be ‘Cabbage Pickle‘. While it looks sophisticated to make, I have brought this recipe in such a simple way that anyone can make this banda ko achar at home.
Ingredients:
Cabbage – 12 oz (chopped)
Green chili – 2 (chopped)
Boiled potatoes – 2 (mashed)
Cilantro – 1 cup (chopped)
Garlic – 2 cloves (chopped)
Sesame seeds powder – 3.5 tbsp
Roasted cumin seeds powder – 1 tsp
Lime – 1/2 slice (squeezed)
Oil – 4 tbsp
Red chili powder – 2.5 tbsp
Turmeric powder – 1 tsp
Salt to taste
Instructions:
- Boil potatoes for 20 mins on medium heat and let it cool down.
- Once the boiled potatoes cool down, peel the skin.
- Chop cabbage, cilantro, green chili and set it aside.
- Roast cumin seeds and let it cool down. Once cooled down, make a powder and set it aside.
- Mash the potatoes after it cools down, and let it completely cool down.
- On a big bowl with chopped cabbage, add sesame seeds powder, roasted cumin seeds powder, chili powder, green chili, salt, lime juice.
- Temper the chopped garlic on oil and turmeric powder. Instantly add this to the big bowl.
- Now, mix them very well with your hands by squeezing the potatoes.
- Garnish with chopped cilantro.
- Serve and enjoy!
