Healthy Stuffed Mushroom Recipes Vegan with Cream Cheese

Ingredients:

10 oz mushrooms

1/2 medium onion, chopped

1 small green chili, chopped

1/4 cup cilantro, chopped

salt to taste

1/2 tsp black pepper

1 tsp garlic powder

1 tbsp lemon juice

2 tbsp olive oil

5 oz cream cheese (room temperature)

2 tbsp bread crumbs, some more before baking

Steps:
  1. Preheat the oven to 350 degree.
  2. Remove the stem from the mushrooms and chop the stems into small pieces. Place the mushroom caps in a baking sheet. 
  3. Chop all the veggies into small pieces and set them aside.
  4. Heat 2 tbsp olive oil in a medium saucepan over medium. Add chopped onion, mushroom stem. Fry for 2-3 minutes.
  5. Add chopped green chili, salt, black pepper, garlic powder and stir fry.
  6. Add cilantro and lemon juice at the end and transfer to a bowl. Let it cool down for 10 minutes.
  7. Add cream cheese and combine with the mixture. Add breadcrumb and give one more mix.
  8. Fill the mushroom caps with the fillings. Spread breadcrumb on top.
  9. Bake for 20 minutes until the top is golden brown. Stuffed mushrooms are ready to serve.
