Healthy Omelette Recipe | Veggie Omelette Breakfast

Perfect breakfast or brunch recipe for weekdays or the weekend. This video on omelette breakfast recipes shows how to make a healthy and delicious breakfast veggie omelette to start your day.

Ingredients:

2 tbsp olive oil x 2

1 cup chopped mushroom

1/2 cup chopped onion

1/3 cup chopped red bell pepper

1/3 cup chopped green bell pepper

1 tsp of finely chopped jalapeno pepper

salt to taste

fresh ground black pepper

3 eggs

1/4 cup fresh chopped cilantro

1/4 cup shredded cheese

 
Steps:
  1.  Heat 2 tbsp of oil in a pan over medium heat.  Add chopped mushroom and stir-fry for couple of minutes or until light brown.
  2. Add all the remaining veggies, salt and pepper. Stir-fry for 2-3 minutes and transfer to a bowl.
  3. In the meanwhile, whisk 3 eggs + salt + pepper in a bowl. Add  fresh cilantro  whisk again. Set it aside.
  4. Heat 2 tbsp of oil in a medium pan over medium heat.  Pour egg mixture, let it cook on low heat for 1-2 minutes.
  5. Add veggie mixture on top (half portion) + shredded cheese. Flip the other half to make semi-circle Omelette.
  6. Enjoy your Omelette with favorite toast and tea/juice.
