Instant Easy Egg and Veggie Sandwich Recipe | Your Next Perfect Lunch for School or Work

This is a recipe to prepare your next perfect egg and veggie sandwich for school or work. This simple yet easy veggie and egg sandwich can be enjoyed as a breakfast or evening snack. Prepared with boiled egg and veggies make this sandwich is perfect for your kids or any other family members. This egg and vegetable sandwich can be enjoyed with edamame or fries on the side.

Servings: 6 sandwiches

3 eggs
Chopped cabbage – 5 oz
Chopped green and red pepper – 2.5 oz
Chopped onion – 2.5 oz
Shredded carrot – 1.5 oz
Ginger garlic paste – 1/2 tbsp
Mayonnaise – 3-4 tbsp
Salt and pepper to taste
Butter – 1 tsp x 2
Bread – 6 slices or 6 Croissant
Serve with boiled edamame with pinch of salt and home made fries.

Steps:
  1. Boil eggs with some salt for 8-10 minutes. Drain and keep in ice water and peel. Smash the eggs in a bowl. Add salt and pepper and mix. Keep it aside to cool down.
  2. Chop all the veggies and keep it aside.
  3. Heat butter on a pan over medium flame. Add chopped onion, red and green bell peppers, salt and pepper.
  4. Fry for 1-2 minutes. Add minced ginger garlic paste, carrot, cabbage and fry for 2 more minutes. Transfer to a bowl and let it cool down.
  5. Combine smashed egg, veggies, mayonnaise and mix well.
  6. In the meanwhile,  spread butter on 2 slices of bread and remove the edges. 
  7. Make a sandwich with the fillings.
  8. Egg veggie sandwich is ready to serve.
