Ingredients:
Sweet corn – 4
Onion – 1/2
Jalapeno – 2 small
Cilantro – 1/2 cup
Ginger – 1.5-inch small
Rice flour – 1 cup
Bread crumbs – 2 cups
Black pepper – 1/2 tsp
Chat masala – 1.5 tbsp
Corn starch – 3 tbsp
Salt to taste
Instructions:
- Bring the water to boiling temperature.
- Once the water starts boiling, add chopped sweet corn and boil for 1o mins.
- Let the corn cool down and use a knife to cut the corn off the cob.
- In a good processor, add ginger, jalapeno, cilantro, onion, and corn and chop in a low setting. Make sure it is coarse not a paste.
- Transfer to a bowl and add salt, pepper, chat masala, rice flour, corn starch, and mix them very well.
- Set it aside for 15-20 mins.
- Add oil (to deep-fry) to a pan.
- Either use a small ice-cream scopper or your hands to make small balls of the mixture that you prepared 15-20 mins ago. Slowly deep fry until golden brown.
- Cook in batches and be extra careful with hot oil. Repeat the above steps for more fritters.
- Serve hot and enjoy!
