This recipe (tofu scramble) is a perfect healthy vegan recipe for weight loss! I love how simple this scrambled tofu is to make with just a few ingredients that are already available in your kitchen. Ingredients:
Tofu – 16 oz
Olive Oil – 2 tbsp
Chopped Onion – 1 cup
Chopped Red Bell Peppers – 1/2 cup
Minced Garlic – 2 cloves
Turmeric Powder – 1/4 tsp
Black Pepper – 1/4 tsp
Salt to taste
Cumin Powder – 1 tsp
Red Chili Powder – 1/2 tsp
Green Onion – 1/3 cup
Basil Leaves to garnish
Steps:
- Drain the water from tofu by pressing with a heavy object on top for 15-20 minutes.
- Crumble the tofu (firm) and keep it aside.
- Heat 2 tbsp olive oil on skillet over medium heat. Add chopped onion, red pepper, minced garlic and sauté for couple of minutes.
- Add tofu, turmeric powder, salt to taste and black pepper. Sauté 4-5 minutes.
- Add cumin powder, red chili powder and stir-fry for 3-4 more minutes.
- Garnish with green onion and ready to serve.
