Ingredients:
Salmon Butter – 1 tbsp
Pinch of black pepper x 2
Pinch of cayenne pepper x 2
Salt to taste
For the sauce:
Butter – 1/2 tbsp
Chopped shallot – 1/2 cup
Minced garlic – 1 tbsp
Dry white wine – 1/3 cup
Heavy cream – 1/3 cup
Parsley – 1/4 cup
Lemon – 1/2
Salt to taste
Pinch of black pepper
Steps:
- Season the skinless salmon with salt, black pepper and cayenne pepper on both sides.
- Heat 1 tbsp of butter on medium skillet over medium heat. Add salmon fillet. Let it cook for 1-2 minutes on both sides or once the side of the fish becomes white.
- Transfer to a plate and cover with aluminum sheet to keep it warm.
- To prepare the sauce, on the same pan add butter, chopped shallot, minced garlic. Stir-fry for couple of minutes.
- Add dry white wine, heavy cream and salt + pepper. Let it simmer for couple of minutes.
- Garnish with chopped parsley and lemon juice. Transfer to a small bowl.
- Serve the salmon with baked asparagus and the sauce on top
