With ground moong daal (lentils), you can make batter to make yourself a smooth and fluffy pancake-like Newari Woh! This dish can be enjoyed during parties or as a regular snack at home. In this recipe, I share with you how to make an authentic Newari Woh, aka Bara. These moong daal lentil patties are delicious, with full of protein. I am sure you will also try making woh (bara) at your home, following this recipe.
Ingredients:
Moong daal – 1 cup
Garlic cloves – 3
Ginger – 1/4 inch slice
Green chili – 2
Roasted cumin powder – 2 tsp
Cilantro – 1/2 cup
Curry leaves – 6 to 7 leaves
Oil – 1 tsp per each Woh
Water – 1/4 cup
Asafoetida (Hing) – 1/2 tsp
Salt to taste
Instructions:
- Soak moong daal overnight with water and rinse in the morning.
- On a mixture, add overnight soaked moong daal, green chili, curry leaves, ginger slice, garlic, and cilantro.
- Mix and make a fine paste batter. Add little water, in my case I added 1/4 cup. Secret: Make sure the batter is not too thin.
- Transfer the batter to a bowl.
- Add salt and cumin powder, roasted cumin powder, and asafoetida. Mix it well and set it aside for half an hour.
- Heat an iron cast pan (another secret step) over medium-low heat.
- Brush oil the pan. Pour 1/2 cup of batter and flatten with a wet hand to make a patty. Be extra careful while doing so.
- Spread oil over the patty and around.
- Cook on each side for about 3 mins.
- Cook in batches. Repeat the above steps for more patties (Woh) aka Bara.
- Serve and enjoy!
