This authentic Nepali/Newari Choila recipe is the best party food to enjoy with your friends and families. I have prepared it with pork but you can also try it with any meat including chicken to make chicken choila. This recipe, pork choila, is a typical Newari dish that consists of spiced pork meat prepared with different ingredients which are revealed in this recipe. Ingredients:
Pork Tenderloin – 1 pound
Chopped Onion – 1/2 cup
Chopped Green Onion – 1/2 cup
Cilantro – 1/3 cup
Lime juice – 2 tbsp
Medium size Tomatoes – 2
Red Chili Peppers – 8
Ginger – 0.5 oz
Garlic – 3 cloves
Olive Oil – 2 tbsp x 3
Water – 1/2 tbsp
Spices:
Cumin Powder – 1 tsp
Coriander Powder – 1 tsp
Red Chili Powder – 1 tsp
Turmeric Powder – 1/2 tsp
Fenugreek seeds – 1/2 tsp
Salt to taste
Instruction:
- Boil pork tenderloin for 30-40 minutes over medium heat. Flip if needed.
- Let it cool for 15-20 minutes.Â
- Cut the pork in thin long pieces to fry for 3-4 minutes or until reddish brown on each side.
- Keep it aside and prepare sauce. Fry red chilies for 2 minutes, transfer to a bowl. Use same pan to fry tomatoes (half cut) for 5-6 minutes on each side. Transfer to a bowl.Â
- On a stone mortar, add fried red chilies, salt and little water to make a paste. Add ginger, garlic and fried tomatoes and grind to make sauce.
- Cut pork into small bite size and combine tomato sauce, cumin powder, salt to taste, coriander powder, red chili powder and chopped onion.Â
- Temper with oil, fenugreek seed and turmeric powder. Add spring onion and cilantro and mix it well.
- Spicy Pork Choila is ready to serve.
