Ingredients:
1 pound of ground chicken
3 cups of penne pasta (boil with pinch of salt)
2 tablespoon of extra virgin olive oil x 2
1 cup of chopped onion
1/3 cup of chopped red bell pepper
4 cloves of garlic, minced
8 ounce of tomato sauce
1/2 cup of water
1 cup of pasta water
2 pinch of salt x 2
2 pinch of fresh ground black pepper x 2
1 teaspoon of red pepper flakes (1/2 if you prefer less spicy)
1 teaspoon of cumin powder
1 teaspoon of Italian herbs
1 tablespoon of butter
1/3 cup of cilantro Parmesan cheese to garnish
Steps:
- Boil penne pasta as per instruction on the packet.
- Heat a 12 inch nonstick skillet over medium. Add oil, ground chicken, salt, pepper. Stir fry until light brown. Transfer to a bowl.
- On the same skillet, heat oil, add onion, red pepper, garlic, salt and pepper. Stir-fry for couple of minutes.
- Add red chili flakes, cumin powder, Italian herbs. Stir and add tomato sauce with little water.
- Add pasta water and let it simmer for about 2-3 minutes.
- Add 1 tbsp of butter, ground chicken and penne pasta.
- Stir and garnish with cilantro and grate some parmesan cheese on top. Serve hot.
